Boysenberry Oat Bars
1 package yellow cake mix
2 ½ cups quick cooking oats
¾ (1 ½ sticks) melted
butter
1 cup boysenberry preserves or jam
1 Tablespoon water
Pre-heat oven to 375 °
Combine the cake mix with the quick cooking oats then add
melted butter. Work butter into mixture
until crumbly. Scoop out a little over ½
of the mixture (3 cups) and spread evenly in
a 9 x 13 pan. Pat the mixture
down very firmly. Combine 1 cup boysenberry
preserves with 1 Tablespoon water, stir well.
Pour preserves mixture evenly over the top of the patted down crust
layer, try to keep the preserve mixture close to the sides of the pan without
touching. Carefully sprinkle handfuls of
remaining crumbs evenly over the preserves mixture, pat top layer down lightly.
Bake
for 18 – 20 minutes
