Treats

Pecan Tart Recipe

3 eggs

2/3 cups sugar

1/3 cup melted butter

1 cup corn syrup

1 teaspoon vanilla

1 ½ cups chopped nuts

3 - 4 ready to bake rolled pie crust

 

Preheat oven to 350°

Slightly beat the eggs then stir in sugar.  Add melted butter, corn syrup and vanilla (I like to measure the corn syrup into the same container that held the melted butter so that it slips out easily), stir until well incorporated.  DO NOT ADD THE NUTS TO THIS MIXTURE!!


Roll out pastry crust and use a 2 ½” cutter to make mini rounds.  Gently push each round into a tart opening – fill tray.  Place heaping ½ teaspoon chopped nuts into each tart.  Pour filling into each tart.  Be careful not to overfill – you want the filling line a little below the edge of the crust so it will not overflow.

Bake 24 tart pan for 17 – 19 minutes.

Makes 6 – 7 dozen.



Boysenberry Oat Bars

1 package yellow cake mix

2 ½ cups quick cooking oats

¾  (1 ½ sticks) melted butter

1 cup boysenberry preserves or jam

1 Tablespoon water

 

Pre-heat oven to 375 °

Combine the cake mix with the quick cooking oats then add melted butter.  Work butter into mixture until crumbly.  Scoop out a little over ½ of the mixture (3 cups) and spread evenly in  a 9 x 13 pan.  Pat the mixture down very firmly.  Combine 1 cup boysenberry preserves with 1 Tablespoon water, stir well.  Pour preserves mixture evenly over the top of the patted down crust layer, try to keep the preserve mixture close to the sides of the pan without touching.  Carefully sprinkle handfuls of remaining crumbs evenly over the preserves mixture, pat top layer down lightly.

Bake for 18 – 20 minutes


A tip from Jane - PLEASE make your own butter cream frosting!  There is a wonderful recipe right on the back of a bag of C & H Powdered Sugar.  Well worth the few minutes it takes to whip it up!  If you have any extra it will store great in the fridge.  My friends LOVE to get a container of frosting from me!
